Delicious & ENORMOUS chewy choccy cookies with a Oreo stuffed inside. What more can you ask for?
These cookies + a barrel of tea and I would honestly be in cookie heaven.
Ingredients (makes 9 large cookies)
113g unsalted butter (room temp)
84g light brown sugar
112g caster sugar
1/2 teaspoon vanilla extract
224g self-raising flour (can use plain flour – see my substitues page)
120g Milk choc chips
1 pack of oreos (you could also use mini oreos – cookies wouldn’t like like UFO’s like mine do!!)
Preheat oven to 180 degrees celcius & line a large baking sheet with parchment paper.
Cream the butter and sugar until light and fluffy. Then add the eggs and vanilla and beat until combined.
Slowly sift the flour into the wet ingredients and add the chocolate chips. Fold together until it has formed a dough.
Take a teaspoon of dough and flatten it slightly in the palm of your hand and place on the baking tray. Place an Oreo in the centre of the cookie and then take another teaspoon of dough, flatten and place on top of the Oreo and seal the edges of the cookie dough together (ravioli style). Repeat with remaining cookies and dough.
Bake for 12 minutes and no more, remove from the oven and leave to cool. (Don’t be afraid to take them out if they look a little undone as they will firm us as they cool).
