Nutella Cookie Pizza

There is nothing better than ridiculously over sized cookies.
Actually that’s a lie – a Nutella smothered, chocolate sprinkled gigantic soft baked cookie is SO much better!

This is by far one of the most tastiest bakes you will ever eat. I made this for a special someone’s birthday instead of a cake and it went down a storm. The cookie is soft and chewy in the centre, crunchy on the edges and packed full of slightly melted milk chocolate chunks. I topped mine with Nutella because it is easy to spread, super creamy and just damn right delicious! I then dotted some Smarties, Milkybar Buttons and Malteser’s on top and finished my cookie pizza by grating over white chocolate.

If my choice of toppings aren’t your kind of thing, then simply bake the choc chip cookie, use it as a base and then add whatever you like. Why not try spreading chocolate ganache or even pipe buttercream on top? Then add whatever toppings you fancy; sweets, chocolate or even Oreo’s!? The best thing about this bake is that the options are endless, so get creative and try out whatever flavours you fancy.

P.S – my next cookie pizza will be a Reese’s Peanut Butter explosion!!!





Ingredients (makes a 23cm round cookie pizza)

For the cookie pizza base:
125g unsalted butter, at room temp
75g light brown sugar
50g caster sugar
1 medium egg, cold from the fridge
1 tsp vanilla extract
150g self-raising flour
200g milk chocolate, cut into small chunks

For the topping:
1 jar of Nutella
Any sweets or chocolates (I used Smarties, Milkybar Buttons & Maltesers)
A few squares of white chocolate (to grate on top)


Preheat the oven to 180°C and line a 23cm round baking tin with greaseproof paper (remember to grease the sides too)

To make your cookie base, start by creaming the butter and two sugars together until soft and fluffy. Next, crack in the cold egg and add the vanilla extract and mix together (the mixture is more than likely to curdle at the point, so don’t worry if it does).

Now add the flour and the chocolate chunks and fold into the mixture until all ingredients are combined into a dough. Cover the bowl with clingfilm and chill in the fridge for 1-2 hours.

Once chilled, remove from the fridge and press the cookie dough into the baking tin to make an even layer – see below.


Bake the cookie for 15 minutes until lightly browned in the middle and slightly crispy on the edges. Leave to cool completely.



Once the cookie base is cooled, use a spatula to gently remove it from the baking tin and place it on a board or plate (the middle should still be super soft so be extra careful not to break the cookie).

Now for the best bit… spread a thick layer of Nutella on top, add your toppings and grate white chocolate all over for the perfect finish!







Nutella S’mores Cookie Sandwich

There is nothing not to love about the combination of chocolate and melted marshmallow that has been squished together between two crunchy biscuits – or this case soft baked cookies! Even better. This recipe is easier than you think, simply bake some cookies, grab a jar of Nutella, melt some fluffy marshmallows and create a whole pile of cookie sandwiches.*
Alfie (my enormous dog) decided to jump up and gobble down half of the cookies whilst they were cooling , this actually turned out to be a good thing because I would probably eaten all 10 sandwiches. They are DELICIOUS!

*be warned, this is a very messy job so prepare to be covered in sticky marshmallow and Nutella gooeyness.

What you will need:
20 baked vanilla cookies, paired together (I used my ultimate cookie recipe and just emitted the chocolate chunks and rolled 20 smaller cookies instead of 12)
1 jar of Nutella
Approx. 26 Marshmallows, melted (simply place marshmallows in a glass bowl set over a pan of simmering water and stir continuously until melted)


Now the fun part, putting your s’mores together:

Start by first spreading Nutella on one half…


Dollop Marshmallow on the other…



And squidge together… perfection!

I first discovered it a few weeks ago with my girlfriends and we fell in love, after spending almost 3 hours drinking tea and coffee, eating Nutella tarts and gossiping, we made a mutual pact to come back asap to test out their breakfast menu.

When the morning arrived for our Tamper feast we were all overly excited and had already studied the menu religiously. The girls opted for Eggs Benedict, but I just couldn’t resist trying the French toast. Having a sweet tooth means eating deserts any time of the day is acceptable. Let me justify eating this sugar overload at 9am by describing it to you… imagine sweet brioche french toast, topped with caramalised bananas, strawberries, coffee infused maple syrup and crispy bacon. XXL Nutella Stuffed Cookie

Here’s a question for you, is there anything better than a crumbly soft chocolate cookie filled with oozing melted Nutella? I thought not too, but then I came up with the idea of making completely over the top, ginormous Nutella stuffed cookie!!! And I was proved wrong. This cookie is special, it will last for ages and just when you think you’ve finished it you’ve still got the other half to go! If you love chocolate, Nutella and cookies then look no further this is the bake for you, and it gets even better you can make, bake and eat this cookie within 30 minutes. All you need is three ingredients, a bowl and a baking tray and your good to go! So what are you waiting for?
Ingredients (makes 1 extra large cookie)
140g Nutella (plus 40g extra for the stuffed bit – keep this in the fridge)
64g Plain flour
1/2 medium egg
Preheat the oven to 180°C and line a baking tray with greaseproof paper or use a silicone mat.
1. Mix the Nutella and egg together then add the flour. Use a wooden spoon to combine all the ingredients together until it forms a dough.
2. Split your dough into to halves. Take one half, roll it into a ball using your hands and then flatten it out until it is roughly 10cm in width then put it onto your baking tray. Now take your cold Nutella out of the fridge and spoon it onto your cookie in the centre.
3. Take the other half of dough and repeat the same process as above. Then place this cookie over the top of the other one and pinch the edges together so they are sealed shut. Bake in the centre of the oven for exactly 10 minutes. Remove your cookie and leave it to cool for 5 minutes before eating.
